Spicy Dal with vegetables



Ingredients

1 cup toor dal
2 medium tomatoes
2 tbsp. coriander leaves
1 tsp. coriander powder
1/2 tsp. chili powder
1/2 tsp. turmeric powder
1/2 tsp cumin powder
2 tsp. ginger- garlic paste
3 tbsp. ghee or clarified butter
3 small onions
2-3 kinds of vegetables like capsicum , beans, gourd , carrots etc.Clean and slice the vegetables.
For the seasoning
1 tsp. cumin seeds
1 each cardamom, cinnamon, cloves
3-4 bay leaves
Method:
Boil toor dal in a cooker for about two whistles. In the blender, blend together an onion, ginger-garlic paste, coriander leaves, tomatoes, cumin powder, coriander powder,turmeric powder, and chili powder. Slice the other onions finely. Put 2 tsp ghee in a pan and fry the sliced onion .
Put the cut vegetables in the pan and cook it for 2-minutes
Then add the ground masala and fry till ghee starts separating.This will take another 15-20 minutes Now add the boiled dal to it and add a little water to make some gravy. Add salt to taste. Boil for a while till you get the required consistency.

Seasoning
Add 1 tsp ghee in the hot pan and fry the bay leaves , 2-3 Red chillies, cardamom, cinnamon ,clove and the cumin seeds and add to the cooked dal.
Enjoy your spicy dal which goes well with both rice and chapatis.

Lazeez paneer malai kofta


Ingredients
For Koftas:
200 gms Cottage Cheese (Paneer)
2 t0 3 medium size Potato (Aloo)
1/2 tsp Red Chili Powder (Lal Mirchi)
1/4 tsp Garam Masala
6 tblsp Cornflour
Oil for frying
For Gravy
4 Onion (Pyaj)
2 Tomato (Tamatar)
Coriander Leaves (Dhania Patta)
1/4 cup Malai
1/2 tsp Cumin Seed (Jeera)
1 tsp Coriander powder
1/2 tsp Salt
1/2 tsp Red Chili Powder (Lal Mirchi)
1/4 tsp Turmeric (Haldi)
1/4 tsp Garam Masala
2 Bay Leaf (Tej Patta)
How to make paneer kofta:
For the kofta
Boil potatoes and peel them.
Grate paneer and potatoes.
Add salt, red chili powder, garam masala, 2 tablespoon cornflour and mix well.
Make round balls of this mixture. Dissolve the remaining cornflour in 1/2 cup of water .
Now heat oil in a pan. Dip the balls in the cornflour mixture and fry balls in the oil till brown in color. Remove the excess oil in kitchen paper
For the gravy
Grind onion and tomatoes together.
Chop coriander leaves very finely.
Heat oil in a pan.
Add cumin seed and bay leaf.
Add onion, tomato paste and brown it, stirring continously.
When it leaves oil add malai, salt, red chili powder, jeera powder,turmeric,coriander powder, garam masala.
Stir it continously for a minute.
Then add 2 cup of water.
Put on the lid and simmer for 5 minutes.
While serving reheat the gravy and then add koftas to it.
Garnish it with chopped coriander leaves.
Enjoy your delicious paneer malai kofta.

Scrumptious Coleslaw for the calorie conscious




Ingredients for the salad
  • 1 cup shredded red or green cabbage or mixture of both
  • 1 onion thinly sliced
  • 2 large carrots peeled and shredded
  • 1 apple thinly sliced and cut into small pieces (optional)
Ingredients for the dressing
  • 1/2 cup plain yogurt
  • A small piece around 50 gram of processed cheese
  • 1/2 teaspoon of yellow mustard powder (instead you can use mustard seeds also)
  • 1/4 teaspoon of black pepper powder
  • Salt to taste
Put all the ingredients into blender to make a smooth paste.

Method
Wash the shredded cabbage with ice cold water. This makes it crispy and delectable.Strain the cabbage to remove all the water . Mix the thinly sliced onion and the shredded carrot .
To give a fruity twist add small pieces of apple.
Refrigerate the cabbage mixture and the dressing.

To serve, pour the dressing over cabbage mixture; toss to combine. Season to taste with salt and pepper. Makes 4 to 5 servings..Enjoy your mayonnaise free coleslaw salad.
